Hotel Vazisubani: an estate in Gurjaani (Michelin Guide mentions)
Georgia is home to, among other things, the earliest evidence of wine production in the world.
And against the backdrop of an 8,000-year-old wine culture, the Vazisubani estate, founded in 1891, is relatively new.
The 19th-century splendor of this beautifully restored house adds a huge amount of character to its 19 rooms and suites, which have been remodeled by a team of Georgian and British architects and designers and fitted with a unique collection of antique English Victorian furniture, creating an atmosphere quite unlike any other.
The house is surrounded by extensive parkland, perfect for an afternoon picnic or an afternoon stroll.
And beyond that, there are vineyards responsible for producing wines that use the ancient Qvevri method.
These wines are naturally featured in the selection available in the hotel's restaurant, where Chef Keti Bakradze creates creative interpretations of traditional Georgian dishes in the classic farm-to-table style, using many ingredients grown right here on the estate.
The result of all this is an experience that shows Georgia from a side rarely seen by visitors.
