Jaume Serra - Taking cava to the next level

Spain's sparkling wine scene is rapidly changing under the leadership of Cava producers. The emergence of new categories, the growth of organic viticulture and the ongoing revolution in single varietal cultivation have forced DO to acquire a new look and an inspired vision.
Today, Cava's most vibrant brands are making waves, with companies such as Jaume Serra considered leading innovators. The well-deserved reputation of the Haume Serra site features the grand original building and farmhouse "El Padruell", founded in 1647, and the estate is well known to sommeliers and wine lovers throughout Spain. Located less than 5 km from the Mediterranean Sea, the winery offers spectacular views of the Catalan coastline where the vineyards merge with the sea. It was this area that captured the imagination of Don Jaume Serra Güell in 1943, prompting him to establish his own estate. After a lengthy visit to Jaume Serra's Villanova i la Geltra vineyards in Villanova i la Geltra, Barcelona province, Catalonia, the Garcia-Carrion family purchased the winery in 1997. Jaume Serra was the perfect addition to the premium brand portfolio of the firm, which has also been building its winemaking tradition for over 125 years. The purchase of Jaume Serra allowed for the strategic expansion of Pata Negra's leading pan-regional brand. The introduction of Cava into the Pata Negra collection has allowed Garcia-Carrion to bring both its award-winning brand and Spanish sparkling wine to international attention. This has strengthened Pata Negra's position in key markets and has also led to an increasing demand for Jaume Sierra labeled Cava Bottles. Today, the two brands are synonymous with quality Cava in 157 countries, leading the DO presence in England, Belgium and Germany, and growing steadily in the US and Asia.
Jaume Serra's cavas undergo secondary fermentation in bottles. Innovation meets tradition The Haume Serra winery, built by its founder, was inaugurated in 1986. Since then, it has skillfully combined tradition and dynamism. Here, the master cellar insists on blending different grape varieties before they undergo secondary fermentation in bottles. The best cuvées are aged for up to five years before degorgement, enriching the wine with yeast autolysis. The result is an array of Cava with marvelous precision and focus, combined with creamy complexity.
But Jaume Serra has another, almost cosmic side. This historic estate, controversial as it may seem, is one of the most innovative producers in Catalonia. State-of-the-art automated technology is used to improve winemaking processes.

Assortment of Cava of Jaume Serra Varietal The white Cava of Jaume Serra is mainly produced using three local varieties (Macabeo, Jarello and Parellada), complemented by the Chardonnay variety. The rosé types of wine, in turn, are composed of varying proportions of Trepat and Pinot Noir varieties. This set of varieties provides the basis for a diverse range of wines with unrivaled freshness, minerality and focus: from the seductive Haume Serra Bouquet to the rich, complex Haume Serra Brut Natura Vintage, and from the Haume Serra Chardonnay Grand Reserve to the gastronomic Cava Haume Serra Pinot Noir Rosado. At the same time, Pata Negra's three sparkling labels are characterized by a fruit-focused appeal that has made them absolute favorites among consumers. "Cava's Jaume Serra Bouquet. Justified winner. "Jaume Serra Blanc de Blancs Gran Reserva" is one of Spain's finest cavas, aged in French barriques and aged on the lees for at least 30 months. Its smooth elegance, rich yeasty flavor and freshness have earned it many awards and international recognition. It contributed to García-Carrión's outstanding success in 2023, along with the long-term success of Pata Negra wines, which continue to be awarded for wines from eight different Spanish regions. García-Carrión is also part of a global firm that is wholeheartedly committed to sustainable wine production. Incorporating social, environmental and economic missions, the company has led significant
So if you thought Cava was a static wine category, you need only look at the hills of Villanova y la Geltru to be pleasantly surprised.
